What I do is take my yearly donation budget and divide it up to all of the projects (don't forget about those libraries, dependencies, etc)

Selfhosting can be a desktop app as well, meaning you don't want to use a SaaS product.

Put LibreOffice on all the desktops and GnuCash is a great highly customizable accounting program.

Intuit just did it again by increasing qb desktop pricing over 500% or pay a subscription for the desktop. Stop paying and it stops working.

Spore can join the wall of shame of companies I have seen personally either pull a bait-and-switch, shutdown services unexpectedly, or paywall features unexpectedly to force a mandatory (sometimes huge) price increase:
