Even it they (WhatsApp) still provide reliable E2EE, they have lots of metadata that is not encrypted, and that they actively share with their "advertising partners".

Why not Mojeek, instead of Startpage? Unless you do a lot of queries in French, you should be fine, and Mojeek has an independent index.
Keep in mind that there are many security concerns regarding the official repository; I would personally prefer using either Accrescent, Obtanium (more advanced), or the IzzyOnDroid repository, in case you still want to mainly use FDroid.
