I'm not a lawyer but I suppose it would depend on the ToS and if the user agrees to the recording and processing. But if it allows the extraction of the real identity of the user it's probably a GDPR issue.

Not if this means allowing hate speech, misinformation, harmful content, and less protection for minorities. It only benefits extremists and the companies themselves.
Then again, you should always assume every image and link in an email from a company or service is designed to track you.
That's the reason why you should disable them by default.

Yeah, I think this is part of their current business model, unfortunately.
I mean, it wouldn't be hard to implement OpenAI compatible APIs. That would access to pretty much any AI service, including self hosted like Ollama.
But this would make their service unnecessary.
