Lemmy has an API that allows for easier and more featured app deployment than kbin.
The vast majority of social media and forum users are fucking around on their phones, and therefore want apps that make it more convenient and better formatted than a phone’s web browser.
Hence, Lemmy is getting more traction because of app availability and features.
I’m not trying to be overly dismissive of your concerns, but aren’t most instances run on some dude’s spare computer for shits and giggles? I wouldn’t expect continuity or risk management at all. But also, nothing is lost but a little convenience if one disappears.

Private employer provided coverage varies wildly depending on the size of the employer (because they have more leverage in negotiating with insurance companies) and the employer’s own ideas.
