I'm trying to eat as much plant based as well, and the goal is to eventually go vegan. So far I'm just eating a bunch of lentils/chickpea/tofu/broccoli/nooch and not worrying about the taste too much.
Check out the Fit Vegan Kitchen cookbook. I recommend all of Michael Greger's books, starting with How Not to Die. His books explain why the whole foods plant based diet is the healthiest diet. The books have thousands of references to scientific studies but they are still really engaging and easy to read. He also has two cookbooks. All of his stuff is available on libgen.
Last week I played the single player campaign in Warcraft III Reforged. It's still a great game. I played it a long time ago and have nostalgia for it. Feels good to revisit something that you played as a kid
Tbh I'm not sure since I'm trying to do the same thing but I think the most obvious answer is to go to events where people have the same interests and hobbies like you. Stuff like concerts, movies, hiking, book clubs, yoga classes, whatever you're into. Since you're in a big city, you can just google "your favourite hobby + name of the city". Also maybe there's a cool local org that you can join
