Less than 10% of my movies have an "Unknown" director.

Generally, it's present for the same kinds of movies/bundles. Very apparent when I sort by purchase date: Hitchcock bundle, Star Trek Bundle, Aubrey Hepburn movies, Neil Simon Bundle. Not all of them in each of those groups, but a lot (plus a bunch of other randoms).

Why can iPhones seamlessly switch between resolutions, framerates, and dynamic ranges, but not Apple TV?

iPhone - Apple makes the whole device.

Apple TV - Apple does NOT make the whole device, they make a box that plugs into the TV.

Normally, I'd say set for SDR and set to match.

But I thought, until this post, that all the apps that didn't support it were only SDR.

In the past I've definitely had HBO match for me, but I can't think of the last thing I watched with the new Max app. I don't use the other apps you mentioned (YouTube once in a long while).

VLC works with my network servers. I haven’t tried it with HDR or Dolby Vision files though.

Infuse is the app to get. It indexes all the files nicely and ads cover art. It plays anything I throw at it. No special service software needed.
