I find super Ornstein pretty difficult in NG+, so I typically do super Ornstein in NG and super Smough in NG+. Otherwise it doesn't matter
I may be misremembering, but I believe this fight is harder in the Remaster than the original as a result of changes made to the length of time it takes to go through fog gates or something like that
