I've had beta profile installed for years, no issues before this. There is no evidence to support your claim.

Phone is on 17.1.1. Is anyone aware of how to rectify this? Searched around but didn’t really see anything that helped.

10.1.1 is out. in c/apple@hardware.watch

Still can’t update past 10.0 on my S7. iPhone is on 17.1.1.
