I saw a lot of factory games in other comments but I didn't see my drug of choice : Captain of Industry. The process chains are really complex and you can't just throw space at a problem. I played for 24 hours straight once without getting up from my chair.

The only issue I had is that it sent me down a bridge that's only open for certain hours at a time when it was closed, but that's quite the edge case.

A 30 sec search shows plenty of job posting for bank tellers in France.
Ambulances can drive on the bike paths, like in the Netherlands. Way easier to get out of the way of emergency vehicles on a bike.

On Linux there's also 'units' which is amazing for this.
