I'm rooting for Arsenal, but it's hard to imagine them beating Real Madrid over 2 games. I think Arsenal might win at home though.
PSG and Barcelona are probably the two strongest teams in Europe at the moment and I don't think either will have too hard of a time progressing.

Your training should hopefully be a life long marathon, not a sprint. Be patient and consistent and gains will come. As you've described in your post, you are objectively making progress, so don't stress it.
