Hm. No. I changed WebUI\AlternativeUIEnabled=true and killed the container, but it wasn't on the alternative UI after it started back up.

Hm. It doesn't look like that changes when I change it in the UI, so this isn't the right setting. What is, though?

Is there any reason that the caller wouldn't know if the meeting they're holding has been created or not? I'd keep it simple by keeping them separate unless there's a compelling reason to meld them.

You don't need to expose it to the web to use a reverse proxy. You can use traefik, caddy, nginx, or any other reverse proxy to serve IP:PORT on domain.tld. You can use 80 or 443 as you'd like.

If you're using docker, it's even easier. How are you hosting your jellyfin?

I like Proton Mail. It does have a free tier, but the paid tier is pricier than you suggested in your post.

Same. I installed the web as an app, which is working much better for me. Jerboa needs some work before it's ready for prime time.
