Makes sense - why allow people to administer their own machines? :-P
Computers mostly don't force software updates on you, unless you tell them to. (Caveat: IT routinely forces updates on people.) Find the setting where you specifically asked the machine to keep itself updated, and turn it off. If you can't find it, throw the machine away and get a better one where you can be in control:-P. It's like reading the Muller report, or for that matter, the constitution. Pro-Tip: it helps if you don't bother to read it at all. That way you can pretend it says whatever you want it to say! Not every boss earns the respect of their employees... in fact most people worthy of respect end up being removed from a managerial role, I've found. Sorta like a good politician - more likely to end up killed than reforming the system.:-(
