Do I have to double tap the side button for Apple Pay or will it automatically pull up wallet near NFC reader like the iPhone? in c/apple@hardware.watch

Both. Holding your watch near a device that expecting payment will pull up your wallet to your default card automatically but you will always have to confirm you want to pay with the selected card.

I really want Apple to add a triple tap to the Watch in c/apple@hardware.watch

There are a bunch of products better suited for this like Owlet you may want to research. I don’t have personal experience with them but they’d be a better choice than an Apple Watch.
