I've got a feeling that I read that is corrected on the latest beta update, might be worth checking that out

No I do not see that as a problem. I think, seeing some of their clients that it's a reliable company
After reading what you wrote and as I have time, being retired... thought I'd look at what you suggested, so now I have Duckdns & WireGuard setup as well, it's no where as easy as Tailscale. Maybe a second hand NAS? They can be found dirt cheap, and often you can upgrade the HDs easily, or if your running a desktop PC with room, just add internal HDs as these are cheaper
As others have stated, Dual boot but with two HDs one OS per Hard Disk. Otherwise Windows will write over the Linux grub (the equivalent yi windows MBR) one day (been there, several times 😭) and then it's a right pain to get it back to normal. For the sync option, there are several options, Dropbox is available as an app on Linux, Also NextCloud works extremely well
Garmin Epix Pro gen 2, by far the best, as like the 7x but with an OLED screen. A real fitness watch, rather than a apple smart watch
Installation was a breeze, far far easier than wireguard with duckdns. (which I have now just done as well) But can't you add it to HA as a add-on?
They often do some promotions, got mine at about half price
I use NordVPN, works well with Arch, no gui just terminal, only about three times to get it logged, to the country you want to use, and running
Forwarding ports can be a pain, I admit, here in France you get a routeur supplied when you sign up for fiber, and of course they are all different. I got WireGuard with Duckdns working, though impossible to get just duckdns to work on it's own. And it was was far more difficult than just tailscale.
I set up WireGuard this morning, but it's far 'harder' than Tailscale. So now I have both working. 😁
I went from Manjaro to Arch. Installed by command line (took a few tries to get it done... ) I tried their installer but it wasn't very good. Have also run Endeavour on a second pc for a while but I prefer pure Arch.
