Since you own an x99, I'd say go higher if you're able to. 2698v4 chips dropped a lot in price since when I got them and my Gigabyte board took that and 128GB ECC just fine. Though they do eat 130-150w.

V4 you have the generation improvement. Just pick how many cores you need.
