I’m guessing you are using and referring to the Quick Actions double pinch, part of the Accessibility settings, if so, well, it was always totally hit or miss for me whenever I tried to use it, always ending in frustration - so I gave up on it. Recently purchased a 45mm S9 So I could play with the new (released in 10.1.1) double tap feature. I’m quite pleased with it. It’s working flawlessly. It’s usefulness is somewhat limited at this point, but what it does - it does very well.

Nope, the SE 2nd generation is a very good watch. It has the same processor as the Series 8 watch but just lacks some of the features (Always in Display, Blood Oxygen Measurement, ECG). It should serve them well. Pay attention to the two different sizes and select based upon how large each of their wrists are. Both of them need to have Apple iPhones (iiPhone XR or newer) to set them up.
Drizzle dish detergent on each side of the watchband. Immerse in hot water and hand scrub. Rinse very well and hang to dry. You should do this at least twice a week if you’re getting all sweaty. You might also consider getting two or three other nylon sports loops so you can change out to a nice clean dry band whenever your want.
