You could before, but any games with steam DRM (which is most of them) would lock your library if your spouse was using it.

That's probably to avoid someone buying a game, and then cheating on a child account to avoid bans.
It's definitely possible, I recently turned off child mode for my kid now that he's older. Unfortunately I don't remember the process well enough to accurately tell you what to do.
Tbf, Google has versions of Gemini that will run locally on phones too, and their open source Gemini models run on 16GB of ram or so.

I think they want to be more appealing to hardware vendors. SteamOS has shown that there's a lot of value in a handheld offering a polished end user experience that windows handhelds aren't able to match. The goal here is probably to partner with other handheld PCs makers to offer a customized Linux based option that has out of the box support for all of the popular PC games stores.
Options are always good, but yeah until proven otherwise I'm inclined to think Bazzite is better.
The steam DRM does matter, games that don't have it could be played without it licking the library. I didn't know that they gave you a full 15 min though, I just knew my son would complain about being unable to play unless I was in something DRM free like Caves of Qud.
