I grew up everywhere but The South. Then I moved there. I was excited to learn that smoke sausage was always an option like bacon and sausage link or patty. A whole new breakfast protein was suddenly available on every menu.

Then I moved deeper south. To the Charlotte area. They had a fourth option I had never even heard of. Livermush. I haven't had smoked sausage since. Because if you are looking for an epic breakfast meat with a strong flavor you can't beat livermush.

There is a fifth breakfast meat that is also epic. Chorizo. I was excited when Taco Bell announced they were going to start offering breakfast. And then I was crushed when I found out it wouldn't include chorizo. I never eat breakfast at Taco Bell. They could change that. They could offer chorizo. A spicy potato soft taco with chorizo added would be amazing.

Also, and I can't stress this enough, smoked sausage with all the n's in it is tasty. If you're eating it you're not looking for health food. In this particular case, it worked out to 2 oz per person. Just enough to brighten things up. I'm going to commit sacrilege soon and do fried rice with smoked sausage. I expect it to be very tasty. And it will be close to 4 oz per person.

Sometimes you eat smoked sausage because you crave smoked sausage. Not because you're looking for a healthy protein.

A lot of the nitrate-free stuff is just "no added nitrates/nitrites added" stuff that is loaded with celery salt containing all the necessary n's. AKA nitrate free is really just old school n's.

Don't underestimate the protein from the potatoes. But, yes, overall this is an incredibly balanced meal with the fries being baked instead of deep fried.

Probably best to just have poblanos on the permanent list. They used to be in mine but they made it so you can't buy just one anymore but have to buy a bag of them.

 

A rather standard veg fajita mix served with oven fries coated in an excessive amount of homemade taco seasoning. At the last prep minute I decided to slice up a smoked sausage and crisp it up before adding the veggies to cook. A little queso fresca on top.

We are adding this to the permanent menu.

Cost per person: $2.20 Can you order this anywhere? No place serves oven fries but there are Mexican places that have French fries they could dust with some seasoning before topping with fajita veg.

It's trying to bolt so I have to remove the heads each day. And it's being so prolific that if I don't pull leaves every day it will be wasted. But picking leaves off of your basil is essential to a healthy basal plant. You can let him just grow and they might look great but if you pull some leaves off everyday it becomes hyper productive.

I ended up with one for free after years of not caring. What I found is that you cannot match their ability to turn the cheapest hot dogs into great hot dogs. That a kielbasa or smoked sausage becomes a work of art. Heat up a microwave burrito in the microwave and then crisp it in the air fryer. Perfect for egg rolls. Anything where that skin has to be crispy or have a bite to it is a great thing to throw into an air fryer.

What do you do when you have basil that needs trimming every day and you have already dried enough to last the next year? You bake some bread and make Panzanella.

Cost per person: $3 because red and yellow bell peppers are expensive.

 

Sometimes I end up with the weirdest one offs of meat like pre cooked burger patties for free. Fried rice is the perfect way to use them up and clear out any veg scraps too.

This is the time added fresh ginger. I planted some and now have a supply of fresh ginger to use without paying a fortune.

Eggs free from the yard.

Cost per person: maybe $1

 

Apples were perfect. Pork chops lacked grill marks. Need to figure out how to get grill marks without drying out the meat.

The packet of sesame/pumpkin seeds and craisins was free. Local food bank has a grab what you can kale salad mix and this packet was in each one. We wanted a day to see what wasn't taken and then distributed them to local animal people.

Pork chops were marinated in a mix of homemade Emeril BAM, olive oil, cider vinegar and salt.

Was it tasty? Definitely. Cost per person: $4.25

 

Home grown eggs and bell pepper. Cost per person: $1.80

 

Provolone and cheddar.

Potatoes were half price. Squash from garden. Rye bread was free.

Cost per person: $1.50 Cost of you paid retail for ingredients: $3

Corn dogs and fake Doritos.

Cost per person: $2

 

Basically $3 per person and most of that is cheese.

Pizza 1: honey ham, home grown bell pepper, mushroom.

Pizza 2: pepperoni, mushroom, olive, banana pepper.

Cutting board: made from poplar. Made from passive aggressive spite. You should never frame a board like this one is. The normal swelling of wood as it absorbs and sheds humidity will cause it to snap itself apart. It was made in 2019 to test if a thin enough board could survive. I have only ever used it for cutting pizza because poplar is soft for a hard wood and every knife and pizza cutter leaves a mark. It's great for end grain boards but not face or edge grain.

Anyway, the board refuses to break despite more than 200 pizzas.

 

Meat was free. Squash was homegrown free.

Cost per person, $2.00 Cost per person if you had to buy everything: $6.75

 

Yellow squash hummus with homemade bread. I'm fighting through my squash surplus and the idea of hummus came up.

At first I was worried about the texture being too, well, you might know, but figured I'd give it a try. I didn't have any tahini but I figured if I did that peanut butter substitution it might work enough to figure out if I should buy some. But I only used half the amount.

The recipe I found called for two large yellow squash. I found that my garden and their imagination has two very different ideas on what large means. I ended up doubling the salt, lemon juice, cumin and olive oil. Recipe in comments.

Did it work? Definitely. It is amazing. As I was plating mine my wife made an exceptionally rare request for hot sauce. Just a tiny amount. It was perfect.

Definitely saving this recipe.

 

Bread home made. Cheese is some home smoked halloumi. Squish is home grown ass and baked with some home made herbs de provence except I didn't have lavender flowers.

Cost per person: $1 because at this point homegrown squish is basically free and the cheese was on clearance. If you have the ability to cold smoke cheese you never pass up clearance cheese.
