Sounds like the M1 Air is doing everything you need just fine, meanwhile your Windows PC is not.
I also used FL Studio and can agree, it works better on Windows. So, I switched to Logic Pro on my Mac, which I also like more.
FL is great when you know it inside and out, but to find some of the simplest things they can often be buried in menus. And Logic has felt snappier for me. Just personal preference.
Anyway, back to your upgrade question. I too had a M1 MacBook Air, and I upgraded to the base M3 Pro MBP. Happy I did, and my M1 Air had a $465 trade in value. That made it worth the upgrade personally.
I wouldn't buy it for the "space black" color because it's not. Very much a dark grey in light. Still very beautiful though.
If it was me, since you like FL Studio and your windows machine needs some love. I'd be building a new rig.
