tl;dr iPhone 11 no longer connects to cellular, wifi, or Bluetooth, and manual backup to iTunes froze without completing. Do I have any hope of migrating to my new iPhone 15 or is my data trapped on the brick?

I have had a standard iPhone 11 for quite a while, and was long due for an upgrade. Last week it suddenly stopped having cellular functionality; I could still use most features if connected to wifi but I knew the phone was at the end of its run. I was hoping to get a little bit of time out of it before replacing it to try to get a good deal but today both the wifi and Bluetooth cut out as well.

I went to Verizon and upgraded to an iPhone 15, and the rep that helped me said given my situation to wait until I got home to try to migrate it myself, as I'd have to factory reset it if it didn't work in store anyway. I set up the new phone and since my 11 has zero connectivity, I can't migrate over anything in the way that Apple now has it set to do via Bluetooth/wifi. I tried to plug in my 11 and back up manually to iTunes but the download froze before completing a few pixels shy of finishing and has been that way for hours.

At this point, I feel like all of my data is stuck on my brick of an 11 and I'll have to start fresh on my new phone, manually moving the most important stuff eventually. Does anyone have advice for other potential solutions, workarounds, anything that might help me move everything to my new phone? Thanks!
