My wife's iphone was solen while on vacation. She doesnt remember her Apple ID info so cant block it remotely.. can the thief unlock it and see her dirty pictures? in c/apple@hardware.watch

Dirty pictures? Dirt is cheap, just take more pictures of the ground around you.
