Then let's create another one without any politics !pics@lazysoci.al, or lemmy.cafe for instance), and let's start posting pictures of protests, armed conflict, wars happening anywhere in the world in this one, everyday.

Not everybody on Lemmy/Piefed/Mbin is a US citizen. Europe had a few important political events recently, nobody posted about them here to respect that rule.

piefed.social is hard-coded in the source as a 'trusted instance',

That's probably inherited from the past, from a time where Piefed.social was the only active instance around. Quite a few of those settings are being made customizable in the last few days, so that every instance can configure it as they wish.
