Most of the time they give you a "free" product in return like Gmail or 15GB of "free" space.
I was wondering the same after listening to Darkent Diaries episode about swatting and how an IP can reveal your location.

I believe signal uses google to push the notifications and if its giving you the option to add it to google keep the phone obviously know what it is the message content.
