I have no opinions about nitro-infused steel, but: Those are just sources of nitrogen for whatever process is used. In other words: there should be no remaining CN- (cyanide) or NH3 (ammonia) on the pan after manufacture because the N(itrogen) has gone into the alloy. Always a good idea to give your pans a wash before use anyway, of course
I knew a guy who built little one person helicopters as a hobby. He bought kits for that, though

I made my earlier comment because you said that it isn't a disability because there's medication for it. I'd like to add more to it if you feel like reading.
There is a spectrum for ADHD, and many kids who were diagnosed with it grow up to be functioning adults who don't need medication. There are also many children diagnosed with ADHD who grow up and can't function in society.
It's a little different when we're diagnosed as adults. Some people just wonder why they do some things differently than their peers, but they aren't disadvantaged because they are neuro divergent. Others similarly choose to use support from family, friends, and therapists to develop coping skills because they are on the more mild end of the spectrum.
I am not part of those groups. I was diagnosed at 35 because I've had an extremely difficult life, and it mostly boils down to ADHD. As soon as I was medicated, I was able to start working towards my goals, and I've earned a few achievements that I've always wanted. The motivation was there, but my ADHD symptoms were so severe that I was at a disadvantage. I dont want to be disabled, but that's the language available to me for my situation

Medication is a privilege that many with ADHD can't access. It also doesn't work for everyone. Are those people not disabled?
Also, ADHD is more than struggling to focus, or to sit still. Many of us struggle to start tasks, manage money, keep things tidy, or manage time. These issues can cause so many problems in life, ranging from inability to hold a job to relationship issues. Once the medication wears off, these symptoms rise back to the surface; because ADHD medication isn't a cure, it's symptom management.
Wow. I've been vegan or vegetarian for decades and I've never heard of blanching tofu. Gonna have to try that tonight!
My organic chemistry prof was equally weird about synthesis. But his ego rested on everyone passing, in contrast to the biology prof who failed half the students in her classes. She was the better teacher. I don't remember much from my second semester of o chem because I didn't really need to learn anything to get an A, but I have retained quite a lot from her classes
