Sorry I cannot help you, but as someone wanting to set up a tent with fogger soon I'll just lurk and see if someone answers. Why the destilled water, fogger doesn't work with tap water? I probably would connect the fogger to a simple timer (one of those to plug into your wall socket, to switch it on and off intermittently. Fogger permanently on might be a bit much. An Arduino is just a slightly more fancy version to do the same. Unless you like tinkering with Arduino, happen to have one there, and absolutely want to add sensors and such I'd say it's too much work.

Well you’ll definitely benefit from some lightweight automation in such a setup. Smart plugs may be cheaper and quicker than rolling your own with an Arduino or similar.
However, if you are just looking for a reason to play with Arduinos, you have a perfect excuse.
In summary, off-the-shelf = easier, DIY=fun
