If the server is not FOSS, why even bother with either Signal or Olvid?
Wouldn't a hardened self hosted XMPP server be more trustworthy than some random clown saying their stuff is supposedly secure?

yes. But XMPP is an open standard, it's not promoted by any corporation and thus it doesn't have a marketing team. That's why Signal, Matrix or Olvid are more discussed.
