I'm not sure what type of units these are, but I'm not sure NEST/Ecobee would be the best for these.... but maybe?
Mesa might be the best alternative. I used them in my baseboard heated office, and it works great.
Home automation is the residential extension of building automation.
It is automation of the home, housework or household activity.
Home automation may include centralized control of lighting, HVAC (heating, ventilation and air conditioning), appliances, security locks of gates and doors and other systems, to provide improved convenience, comfort, energy efficiency and security.
Warning: Working with electricity can result in injury, property damage, or even death if it is not done properly. Please keep this in mind while assisting others. If you are not sure about what you are doing, hire a licensed professional.

We need more information on your HVAC system. It sounds like you may have mini splits, but I’m not entirely certain.
What you are talking about could be very different from a standard setup which means typical things like Nest may not work. Could you post some pictures of the a/c units, thermostats, and wiring behind the thermostats?
I’m pretty sure you want to go with Mysa Thermostat for what you have. Use their compatibility questionnaire to confirm.
What you need are smart thermostats. It sounds like the hard part will be finding smart thermostats that work with your particular units.
Smart plugs and Node-Red will take care of this for you, unless you are also trying to control temperature.
