I currently have an iPhone 11 I am thinking about replacing. Leaning towards 15 because I’m not a huge lightning cable fan but would have to buy all new stuff, was thinking about getting the Airpods pro anyway though. Planning on just buying it in full from Apple, have never done this before, what do they do for black friday?

Ya get the 15. It has USB c looks hella nice and if you break the back, I just found out, you can get it replaced for $169 which isn't bad

Apple's Black Friday is always pretty minimal. This is supposedly what they're doing this year: https://9to5mac.com/2023/11/16/apple-black-friday-deals-cyber-monday/

Get one of the 15 series. It'll last longer and you'll get the USB C port.

Edit: but Apple is does not seem to be including the iPhone 15 series in their BF promotions.
