So my first and only iPhone was the iPhone 2G. Yeah, the first one ever released. The phone died right when one model was getting phased out but the latest model was sold out everywhere, so I ended up "trying" an Android phone, and well ended up staying there till now. With my current Android phone about to die, I figured now is a good time to check out how much has changed with the iPhones/iOS in.. 10+ years (I did buy an iPod Touch 4G which ended up being my last iOS device).

I noticed that my Apple ID still exist, and I have a couple of questions about it:

How much information is saved on the account associated with the Apple ID? For instance, is it likely that the address book on my iPhone 2G would have been synched to Apple's server? I am pretty sure the cloud storage wasn't a thing back then, and I -think- the Apple ID was used mainly to access the Apple store. I am pretty sure backup were done entirely via iTune.

The reason I am asking this is because I am a bit worried that if I was to sign into my old Apple ID on my new phone, it might end up pushing really old / out of date data/contacts into my phone. Alternatively, I also do not want my current phone to upload / overwrite whatever is stored on the server under my old Apple ID until I am able to check what is there.

I am pretty sure I do not have any paid app under my AppleID so I probably won't lose anything if I was to start from scratch and make a new Apple ID, so I am keeping that as an option too. If I was to setup my new phone with a new Apple ID, would I be able to log-out / log-in to another older Apple ID without resetting the phone if I want to? [On Android it is possible to log out on one account and sign into another]
