I've really been enjoying Brotato premium edition on android and steam. It says it uses no permissions on android but no idea what info they get when you buy it.

I don't play any mobile games so I unfortunately don't know any recommendations but if sandboxing an app that doesn't respect your privacy sounds like a good solution to you, you could try shelter. Additionally, the Aurora Store can show you what permissions and trackers an android app on the Play Store uses.
Shelter is a great tip, if only for my need to run multiple instances of an application!
[Edit] Shoot, it doesn't work when there is an existing work profile.
I would expect there to be ports of Rogue, Nethack, and similar; do those count?
Nethack is available through f-droid

Just install Lemuroid (it's on FDroid if you don't use Google), and then you'll have to get your ROMs. Not going to share any ROM sites here, forums usually don't like that.
