I'm thinking of beefing up my Proxmox VMs with a GPU for better performance, especially when using Parsec to get that "Real PC experience". I've heard that Tesla GPUs, being enterprise-grade, can be split up for this kind of setup. Anyone tried it? Any tips or advice would be awesome! Would be purchasing one or two GPUs to do so, in case I want to make more than 4 vms.

If you haven't purchased the Tesla's yet, you can get away with using consumer cards.

Yup, you can so just that, I've got one in two for the kids to game on, works a treat.

That's even a way to sort the licensing out.
