I have a different smoker now, pellet versus Smokey Mountain. I also plan to spatchcock this year as well to help it cook evenly.
So I tell my wife I have to buy the same size turkey this weekend and do a test smoke. She's pissed that I'm basically gonna waste a 16 lbs turkey just to make sure I know what I'm doing. Says just do it live.
