I wish they either just made straight mint ice cream (less peppermint, and more creme de menthe... like Andes mints as opposed to York peppermint patties), or had mint and chocolate swirled or cubed together (like how orange sherbet is packaged with vanilla ice cream sometimes). I would fuck that shit up.
Mint chip is one of my favourite flavours, but the chips kinda ruin it. If they're the little flakes or shavings, it's fine, but hard chocolate chips in ice cream (which is frozen) are just not fun.
Get an ice cream maker and don't let your dreams be dreams. Making homemade ice cream is ridiculously easy.

As someone who dislikes menthol, I absolutely hate these flavours and cannot fathom how anyone would willingly eat something toothpaste flavoured.
The flavour of toothpaste (assuming mint) isn't what makes it gross, it's the texture. The taste makes it palatable in your mouth (or at least that is the intention). When I was a kid, cinnamon toothpaste was an option as well. IIRC there are plain options, but they're worse.
I've made mint frosting (since shops don't seem to sell it, Wilton's buttercream icing but with peppermint extract instead of vanilla) and my wife says it tastes like toothpaste. Her sister, my niece, and I all love it though. My wife's the odd one here. Mint aversion isn't really that odd, though. It's just a flavour and not everyone is going to like it.
I use Elmex mentholfree. Wondered why I had a lot of trouble brushing my teeth earlier in life before I discovered that one.

That's the part I love, decent chips. Strauss makes a lighter mint, but it's more expensive. More expensive is good for me though, then there's less of it in the house. Whole foods house brand is pretty good too. But again, you may want to ignore me because I love the chips.
There's a popular brand here in Minnesota called Kemps Ice Cream that makes a "Peppermint Bon Bon" flavor. It's my absolute favorite ice cream of all time.
Despite the name, it's the good "creme de menthe" mint, not the strong York peppermint patties kind. And the chocolate is just fine shavings, so they melt in your mouth without any hard or chunky texture in your smooth ice cream.
The brand was bought by some ice cream company in Kansas City, but it's still headquartered here in Minnesota, so I believe the brand has spread out across the Midwest a bit. If you're in the region, you should seek it out.
Not sure I can trust ice cream from Minnesota. I'd think ice cream from Texas or Florida would be better, when it's a consumable utility for beating the heat. I quite imagine Minnesota as always being at/below freezing.

what you want is called stracciatella. it is the proper way of adding chocolate to ice cream. you basically drizzle it in while churning, get really good beads of chocolate. if i ever get a working ice cream maker again, i'll let you know.
