It‘s not the first time that i‘m in a conversation and i notice my apple watch doing some shady thing like calling someone or asking me for the exact contact to send a text to and so on…

What are some of the tricks that you all use to avoid that?

siri as others have said. I just went thru this yesterday. I was having a conversation with my daughter and Siri kept talking to us. Drove me insane and I just shut Siri off

Under accessibility there is a touch delay option, that helped me with that problem

Are you perhaps doing something with your arm or hand that is causing the Digital Crown to get pressed on, which is activating Siri? You may want to change the orientation so the crown is on the other side of the watch and see if that makes a difference.
