I have yellow wood sorrel in my yard. Love it's lemony bite in salads, as a quick vinegar slaw, and my favorite is infused in an apple cider vinegar. My favorite weed to eat but be cautious it's an Anti-vitamin for vitamin C. Meaning it stops vitamin Cs function so don't eat it daily

I wasn't aware of that, thanks for the heads up. How long do you keep them infused before eating them? I'll have to give it a try
You put the sorrel in a glass jar and top with the vinegar so everything is covered. Let everything sit for 4-6 weeks shaking occasionally. And the end strain out the solids from the vinegar which is what you keep. The vinegar should have all the vitamins, minerals and beneficial plant components from the sorrel. The vinegar is great on a salad, added to a dish or to make a shrub. I usually mix a few ounces with juice or sparkling water. Best soda replacement

I eat these a lot. We have mainly O. pes-caprae here in Northern California. They are definitely a weed because they swallow everything during winter.
Pretty good but so tart I can only have a nibble.
