Arroz Mexicano (literally Mexican rice). It's simple and quick to make but the flavor is vibrant and comforting at the same time. And if you top it with a fried egg (slightly less traditional) then it's a full hearty meal!

Ratatouille
So easy to make. So good
Grilled dried salted mackerel. Can recommend. Saba bunka-boshi.
Gumbo. Usually I put chicken and sausage in it, but if I can get some good shrimp and crab, that's the tops.
How do you make your shrimp and crab gumbo?
kibbeh. I don't make it in a very traditional way I think. Its the way my Syrian mom taught me. Basically a meatloaf with equal parts lamb and beef. Bulgur wheat, onions, pine nuts and lots of seasonings (cinnamon is the wild card and most distinctive part).
Pierogi
With kielbasa and cabbage. Yummy.
And fried onions and sour cream.
All cooked up in enough butter to drown a small child.
Chnöpfli (similar to Spätzle). Central Swiss wheat pasta.
Knöpfe, Allgäu. Nicht nur Schweiz 😁 (die einzig wahren Käsespätzle)
Semmelknödel
Spinatknödel! Leberknödelsuppe! Kaspressknödel!
Hesperollekes! Chicory wrapped in ham and baked in a cheese sauce. My ultimate comfort food.

Make or eat. Honestly, there are some traditional foods I love to eat but I don't want to make them myself because they're time consuming.
Raw radish. Little bit of salt.
Grilled cheese sandwich.
Cholent and kishke. I make it very rarely but it's really a great comfort food in the cooler months
Deep fried pork belly - lechon kawali
Chapo with beef stew! The stuff my childhood is made of.
Ice cream.
Lithuanian torte.
