Did you, by any chance, transplant them when they were small? Carrots realy hate that and tend to skip root growth.

Nope, they were all direct-seeded. Three different varieties in fertile, well-draining soil with no rocks, clay, or significant compaction.

Many do actually—they will prefer the green part of course, but the orange part is more of treat because of the high sugary content.
