"Matrix" is a pretty difficult-to-search name. What is it? Federated IRC?

TL;DR they switched to simplex because matrix leaks metadata and other flaws. Also simplex's clients have been shockingly stable.

Does xmpp / snikket / jabber suffer from these same sorts of problems?

Very good question! AFAIK, no.
