Unplug while no one is using it? Sure whatever. Weird and unnecessary but whatever.

Unplug while you're actively charging? Psycho behavior

Phone battery has a higher chance to get on fire, than the charger that is charging it.

That is not the point. Lithium-Ion-Batteries tend to enter sudden thermal runaway specifically during charging.
The charger itself doesn't matter.
Chances are that this then causes a smoldering fire whose fumes gently kill you in your sleep...

Compromise rules in my family are therefore:

No charging of cheap Temu-crap in bedrooms at all
phones only charging on fire-proof bases without covering them (so no charging in bed...)
