I helped a friend move today. In related news I hurt myself today.

I had plans for dinner. I wasn't in any condition to make follow through because of the extreme back pain. Freezer pizza to the rescue. To one I added banana peppers and cotija To the other I added kielbasa, jalapeno and red onion.

It's a great way to turn scraps and leftovers into food.

Cost per person, $5 plus extra toppings. It's almost impossible to put a dollar worth of toppings on a pizza.

I like to get the cheese pizzas from Costco (the personal size) and add veggies and maybe some ham or salami. Broccoli mushroom and olive is pretty delish.

I like doctoring up freezer pizza. My go-to ingredients are red pepper flake, garlic powder, shredded cheese (whatever I have on hand), and grated parmesan (added prior to baking). Sometimes if I'm feeling like putting in some extra effort, I'll dice up bell pepper, onion, and mushrooms, then toss them into the freezer, so I can put a couple handfuls on top before putting the pizza in the oven.

I thought about red pepper but remembered I had jalapenos. The cotija is almost the same as parm but a lot less money.

I do this with Aldi pizzas! Less than $5 a pop, add red sauce, extra pepperoni and cheese, whatever, kids fucking LOVED it.

My secret sauce is preheating the oven with the pizza stone in there. Won't even attempt pizza without a stone.

Dear reader, if you haven't tried a pizza stone, get one immediately. No need to pay a bunch of money, it's basically a big chunk of ceramic. LOL, go get a chunk of tile at the hardware store.

Unglazed terracotta planter bases from garden stores work amazingly as pizza stones too and they're usualy like $3-4 for a big one - just make sure to wash it well and do a burn-in cycle to get rid of any residues.

My pizza stone hasn't been in my budget ever. But I did end up with an extra 12-in cast iron skillet. I put that in the oven when I preheat. I can't cook the pizza on it because repeated bakings has removed all the cure. But it definitely acts as a good heat battery. I tried finding a good lead detection stick to see if I could test some terracotta tiles but I couldn't find one on Amazon with a good enough rating.

Great idea with the kielbasa! Gonna try that myself. I do this almost anytime I get frozen pizza as well, which is a bit of a nostalgic comfort food thing for me I guess (Red Baron or Tombstone on a Friday night for max nostalgia). I almost always end up adding more cheese, as the mfrs seem to skimp nowadays.

I broke my back in 2021. I can put in 4 hours of Labor harder than most people my age can even dream of. But I'm going to pay for it. Today I put in 4 hours helping a friend move from a second story to a first story. I literally ran circles around people half my age and did all the heavy lifting. I keep going until it hurts and then a little bit more because if I don't then I'm going to create long-term problems. Things like this are physical therapy.

Make sure you slice it thin just like pepperoni. You may even want to crisp it under the broiler for the last few moments

It's also functional, when I was a lad there was a pizza place near us that sold jalapeno pizza that we would get because it would greatly reduce the number of people who wanted to get a slice

You'll taste the onion but you won't taste the sausage. Jalapenos will just cover that right up.

When I'm lazy I use the Orowheat keto tortillas, slap some tomato paste on with some spices, and pepperoni/peppers/cheese. Airfry 8 minutes at 350. Eat the first one while I bake the second, and have leftovers for tomorrow. Everything goes on frozen, even the grated cheese.

Honestly, I've paid $20 for worse. I'd be surprised if I'm into two of these for more than $3 or $4.
