What annoys me most about this is that these spying devices don’t just spy on their owners, but everyone. Nowadays you can’t have a conversation with anyone without wondering where your words will end up.

So I've been thinking about this, and I haven't done any research yet, but I wonder what email service exists that both respects privacy and also still will definitely be around for the long run

I got my own domain and registered it with an email service. I figured that companies come and go, but my domain will stay the same and I could just swap it to another.

What email service you use? I have several websites with emails. But the email sites are lackluster.

Right now I'm using proton. I tried Zoho for a while, but somehow magically I was subscribed to a ton of spam, and they were just overall shady. I may switch, but right now I'm happy

This but Instagram... Somehow they know even tho i cleared cookies on my Desktop and never logged in again there, the ads show on my phone instagram ads anytime i look up something on my desktop or talk with my partner vocally about. I also have all permissions denied on Android for Instagram... It's getting freaky

Instander is an ad-free version of Instagram. Also, you can review all the data they (meta) has on you and you'll see what websites have been sharing your data (whether you know it or not). You can check you ad preferences to see how they are personalizing things for you. From my understanding it'll also base stuff off what your Instagram/fb friends view/like so even if you turn it off but your partner has shown any interest in it, you may get it too.
