I have been looking for the same thing for years. I basically want the WTA Hike Finder but expanded worldwide, and with some map integration to show the routes visually instead of having to interpret the descriptions.

For Scotland there's

with gpx tracos that you can use offline with Osmand or similar.
For the mid Atlantic area there's "hiking upward", it's pretty awesome.
Organic Maps has trails and is open but its not federated or not dedicated to trails.
Open Street Maps has a lot of trails but obviously not all the other stuff you're looking for.
I use Osmand which uses OSM.
