Reading through a bunch of JBOD recommendations it seems that USB based enclosures aren’t typically recommended. However, to connect a mini-SAS or other to a Mac mini would seemingly require a thunderbolt to PCI adapter with a mini SAS card, adding considerable expense. At that point, seems that you might as well get a thunderbolt enclosure (though an 8 bay Tb is pricey).

Or is USB-C really just fine for this use case at the end of the day.

I would expect to have 3 4k streams going at the same time max, but most of the time, just 1.
