I wonder what kind of incriminating evidence was on those machines that they ended up in a lake, and if whoever threw them in there realised that the information wasn't stored on the monitors lol

But it's clear from the movies. When you smash a monitor you disable the entire camera system and delete all the video archives.
You should have payed more attention.
