I need to backup my 2TB drive to have a secondary backup of my video files. I was thinking coupling same size disks for a virtual RAID system, how do I use them so that

  1. Space is not wasted for larger projects that can't fit in the disk capacity

  2. Know what's inside the disks (I'd have 20-30 projects on each HDD pair)

  3. easy accessible, I find that storing and retrieving those external HDD (2.5) weird, they're fragile and I'm worried I'm gonna bump into them and lose all data

Can this be done without any ad hoc storage accessory?
