Coconut oil is probably my favorite, even with the more processed variety that removes most of the coconut flavor it's still pretty tasty.

please consider switching from coconut oil, it's horrendous for you. it's almost all saturated fat and has been shown to raise LDL cholesterol, practically as bad as butter. something like olive oil is a better alternative.
olive oil and sesame oil are the big ones for me. I do a lot of frying root vegetables and serving them with pasta, where olive oil can be used to fry the veg and/or drizzled over the pasta, and making asian-ish soups, to which I add sesame oil just before serving.
