I'll second Matrix. I used to play around with Fosscord, but I'm not sure how well they're doing nor how survivable they'll be if Discord drops a lawsuit on them.

I mostly use Signal for private comms / DMs but that's not feasible if you're trying to maintain the illusion of anonymity.
