It depends where you are I guess, but in most countries, isn't rennet now derived from modified bacteria?

I think that's only true in some EU countries.
I was really confused when browsing cheese.com (as you do) and noticing "vegetarian cheese" as an option. That's when I learned that there is technically meat in some cheese.
