I’m getting an iPhone 15 Pro Hongkong variant from Dubai which has two physical sims. I want to know if I can use it with my Apple Watch Series 7 which I bought in India? As the watch only has esim option I’m confused if it would be compatible with the HK iphone.

It depends on your carrier, what place do you live in.

Carriers either accept an EU watch or NA watch. The phone itself doesn't matter.

If you are using an Indian carrier, you will be fine.
