On Sonoma 14.0 Macbook Pro 16" M1 Pro 16GB Memory

I was working on a project in Final Cut Pro, trying to export a project and the app froze for a good few min before I decided to force quit through Activity Monitor. It force quit fine, and I gave it a couple minutes. Went into Finder to browse some files in the meantime. I restarted FCP and tried exporting the file and it froze yet again, this time my screen was unresponsive completely and I couldn't even access Activity Monitor to force quit anything. I held down the power button to force shut down. When I restarted, I noticed every single local file in my Documents is missing as well as Desktop. The only files that remain are ones in my Downloads. For whatever reason the Documents folder has been replaced with subfolders that were in my iCloud Drive before, but there is nothing in them. I never messed with or changed any iCloud settings so I am at a loss. I've tried restarting, booting in safe mode, making sure I'm logged onto the right user, running some commands in Terminal as per Google search. Nothing.

What happened and is there any way I can recover my stuff in Documents? For what it's worth I did not think to back up anything (don't have Time Machine) and finally this happened.

I've Googled all around and am unable to find any assistance on this issue.
